After growing up around a barbecue at his parents’ restaurant in Hemingway, South Carolina, Scott moved to Charleston, where he began his own expanding empire.
In an interview with an insider, Scott shared his tips to help every diner have the best experience at any barbecue joint by knowing how to order properly.
Try the sauce before putting it on anything
“Watch out for the sauce,” Scott told the insider. Even if you are a general sauce lover, you should always be careful.
Adding sauce to protein or sides is difficult to remove. And some sources may not be what you are used to or what you like.
“It could be a super sweet sauce you don’t like, or it could be a sauce you like,” he said.
At one event, Scott said he had the experience of proving that he liked both components separately, but might not like them together. “I’m glad I tasted the sauce and it was okay to taste the meat,” he explained. “And when I put the two together, it wasn’t a great combination.”
It is always best to taste before sprinkling the sauce and then sprinkle a little sauce at first so that you can taste it again without damaging the whole food.
Pay attention to the details of the side dish
Scott says that a good barbecue joint probably has two sides: baked beans and collard greens.
So if you’re ordering beans and corrados at the table who want to have something for a vegetarian canteen, you’ll want to ask first what’s in them.

Scott says that when it comes to knowing what to order, he usually makes decisions based on the particular restaurant in which he is located.
“Usually when I go to a restaurant, I chase after their major protein or what they know,” he told insiders.
So, do some research online before you get the food. Or listen to what’s popular with the people working there. Find the barbecue style that the place specializes in (does it feature a particular regional dish or recipe? Do they have a specially made iconic dish?) And try it out.
